SimPatch simulates a whole-cell patch recording setup, including a realistic looking interface and the ability to do a wide variety of experiments. There is a nice review of this program on the CTI site so I'll refer you there for more details. I think this is the nicest of the current crop of neurobiology teaching programs.

Note that this is one of a whole series of programs from this group, including a muscle simulation, a heart simulation, and a couple others. I haven't seen any of the others and the web page is in german, but the pictures look quite good.
